Simple Summer Beans on Toast – there are plenty of recipes on the internet for broad beans on toast- some celebrity ones with loads of ingredients look very complicated. Here’s my simple version :

Lightly steam or boil summer beans (broad beans / green beans – any combination you like). Season with a dash of lemon juice and black pepper.

Make some toast. Spread with cream cheese, fromage frais (or even peanut butter). Cover with the beans and there’s a quick nutritious snack for any time of day.
